Sponge Cake, Banana (P, KLP, TNT)

Yield: 1 10" tube cake

9 eggs, separated
1-1/2 cups sugar, divided
3/4 cup cake meal, sifted
3/8 cup potato starch, sifted
3/4 teaspoon salt
2 bananas, mashed
Juice of 1 orange
Juice of 1 lemon
1 tablespoon cold water

Beat whites with half the sugar.

Beat yolks with half the sugar. Alternate juice, meal, starch, water, salt and bananas into yolk mixture.

Fold in whites. Turn mixture into ungreased tube pan. Bake at 350°F for 1 hour or until toothpick comes out dry. Invert until cool.
