2 kg (4 pounds) Granny Smith apples-unpeeled, cored, cut into 6 - 8 pieces
This cake is without any eggs.
In your food processor grind the apples into fine pieces. Put in a sieve that sits on a bowl and let drain, about 10 - 15 minutes. (You will have about 2 cups of apple juice, which you can freeze.)
In a bowl mix all ingredients except the butter.
Take a rectangle baking pan 10"x7-1/2"x2" size. Do not butter. Line with baking paper.
Put half of the dry mixture into pan. On top put all the apples and cover with the rest of the dry mixture.
Grate the cold butter over the last dry layer.
Bake in preheated 350°F hot oven for 40-45 minutes.
