1/3 cup matzo cake meal
Preheat oven to 400°F. Grease a jellyroll pan, line with parchment paper and grease again.
Sift together cake meal, potato starch, and 2 tbsp. of the sugar.
Beat 5 egg yolks until thick, adding half of the remaining sugar. Stir in grated rind and juice of 1 lemon. Add dry ingredients.
Beat egg whites until peaks form, slowly add rest of sugar.
Fold beaten egg white mixture into the egg yolk mixture.
Spread mixture out in pan. Bake 12 to 15 minutes. Turn out on waxed paper, remove paper from cake.
Spread with 12 ounces jam, which has been beaten to a smooth consistency. Sprinkle with coconut, if desired. Roll up and wrap in waxed paper until ready to serve.

It wouldn't be a Seder without my Nanny's Jellyroll. This is the first year I had to make it and it took 3 tries to get it right, but it's worth the effort to have these pieces of my Nanny with me.
