About 6 medium-size oranges
Preheat oven to 350°F. Grease and flour 10" Bundt pan or tube pan.
From oranges, grate 2 tablespoons peel and squeeze 1 cup juice. Set aside.
In large bowl, with mixer at high speed, beat sugar and margarine until light and fluffy. At low speed, add flour, baking powder, vanilla, baking soda, eggs, orange juice, and salt; beat until well-mixed, constantly scraping bowl with rubber spatula. Increase speed to medium, beat mixture 2 minutes, occasionally scraping bowl. With rubber spatula, fold in grated orange peel.
Spoon batter into pan. Bake 55 minutes or until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack 10 minutes; remove from pan; cool completely on rack. If you like, sprinkle confectioners' sugar lightly on top of cake.
