Persimmon Cake I (P)

Yield: 1 tube cake or 2 loaf cakes

2-1/2 cups sugar
1 cup vegetable shortening
3 eggs
3-1/2 cups flour
2 tsp. soda
2 tsp. allspice
1 cup cherries halved
2 cups chopped pecans
2 cups raisins
2 cups persimmons, mashed
1/2 tsp. salt
3 tsp. cinnamon

Beat sugar and shortening. Add eggs. Beat well. Add dry ingredients. Mix well. Dough will be rather stiff.

Add nuts, raisins, and cherries. Add persimmons last and beat well.

Bake in tube pan for 2 hours in a preheated 350°F oven. Test after 1-3/4 hours. Or bake in 2 loaf pans 3/4 full approximately 1-3/4 hours.
