1-1/2 cups all-purpose flour
Preheat oven to 350°F. Grease and flour 8"x8" baking pan or line with parchment.
Whisk together dry ingredients in large bowl. Add the rest of ingredients and stir until smooth (no need to use mixer or beat, just a few whisks will do it). Scrape batter into pan and spread evenly.
Bake until a toothpick comes out clean, 30 to 35 minutes. Let cool in pan on a rack for 10 minutes.
Poster's Notes:
It doesn't take more than 15 minutes prep time, especially if you have a microplane for the zest, only messes up one bowl.

1 tsp. baking soda
1/2 tsp. salt
1 cup orange juice
1/3 cup vegetable oil
1 tablespoon orange zest, grated
1 tablespoon white or cider vinegar
1 tsp. vanilla
This can be served from the pan, taken to a friend's for dinner (use the pretty foil pans with covers), or turned out onto a platter and frosted if you like. I like this served with berries. This is vegan, so can be used for absolutely any mix of company!
