Marble Cake (D, TNT)
Source: Martha Stewart show on the Food TV channel
Serves: 8 to 10

Cake:
1-3/4 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1 stick (4 ounces, 8 tablespoons) unsalted butter
1 cup sugar
3 large eggs, room temperature
1 teaspoon pure almond extract
1 teaspoon vanilla extract
2/3 cup buttermilk
5 tablespoons cocoa

Glaze (which I did not make):
1-1/2 tablespoons unsalted butter, room temperature
1/2 cup confectioners' sugar
1 tablespoon plus 1 teaspoon milk, room temperature

Preheat oven to 350°F. Grease WELL a 9"X5" loaf pan, line bottom with wax paper or parchment paper.

With an electric mixer, cream the butter and sugar. Add the eggs 1 at a time, mixing well after each addition. Alternately add the wet and dry dry ingredients (except cocoa).

In a separate bowl, mix the cocoa with 1/4 cup plus 2 tablespoons boiling water. Let it cool a bit and blend in (by hand) 1/3 of the batter.

Place large spoons of each batter in an alternating pattern in the loaf pan and swirl with a knife.

Bake at 350°F for 40 to 50 minutes.

This is a recipe that I baked this morning and it is delicious. I got it from the Martha Stewart show on the Food TV channel. I had to bake it considerably longer than the time specified, but I think that is because I used a loaf pan smaller than that specified in the recipe.

I liked this recipe because it was easy, yummy and the size is reasonable for just the 2 of us. I froze half and we'll eat the half I left out for a couple of days (of course, with my sweet tooth, it may not last until tomorrow!!!). It is not too sweet and goes perfect with a nice cup of coffee or tea.

Someone surprised us by visiting about an hour after this came out of the oven and when they came in John asked if I'd just baked Brownies!!!! He said this was his lucky day!!!
