Lemon Cake, Pesach (P, KLP, TNT)

2 boxes Passover yellow cake mix
1 package lemon-flavored gelatin
3/4 cup oil
4 eggs, beaten
1/2 cup water
1/4 cup lemon juice
1 cup confectioners' sugar
3 tablespoons lemon juice

Beat all ingredients but last two together for 4 minutes.

Pour into greased 9"x13" pan. Bake in preheated 350°F oven for 30-35 minutes.

Cool 25 minutes. Invert on rack and cool completely.

Combine confectioners' sugar and 3 tablespoons of lemon juice. Pierce cake with fork or bamboo skewer. Pour glaze over cake.
