Honey Cake, Orange Apple (P, TNT)

Yield: 1 10"-pan or 12-cup Bundt pan

1 tsp. baking soda
1 cup strong tea (2 tea bags) or coffee (4 tsp. instant coffee to 1 cup boiling water)
3-1/2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg and/or 1/8 tsp. cloves and/or 1/4 tsp. allspice
4 eggs
1 cup sugar
1/2 cup oil
1 16-ozs. jar liquid honey
1 orange, rind and all, remove seeds
1 apple, peeled and cored (grind orange and apple in blender or food processor until fine)
1 cup raisins
1/2 cup almonds, toasted and slivered (optional)

Preheat over to 325°F.

Add baking soda to tea or coffee solution. Let stand. Sift together all the dry ingredients, except sugar.

Beat eggs until light and lemon coloured. Add sugar gradually and beat until thick. Add oil, honey, tea or coffee. Mix on medium speed in electric mixer for 7 to 10 minutes.

Add ground orange and apple mixture. Fold in sifted dry ingredients. Sprinkle in the raisins and nuts.

Pour into greased 10" pan or 12-cup Bundt pan. Bake for 1 hour and 15 minutes or until done. Cool before removing from pan.

Poster's Notes:
Remember to lightly coat raisins in flour before adding to cake mixture to prevent them from sinking to the bottom of the pan.
