Honey Cake VII (P, TNT)

Yield: 2 loaf cake pans or 1 9"x13" pan

2 eggs
1 cup sugar
1/2 cup oil
1/2 pound honey
1 tablespoon golden syrup or corn syrup
1 cup flour
1 cup self-rising flour
3/4 teaspoon baking soda
1teaspoon ground cinnamon
1 teaspoon ground all-spice
1 cup very hot water
1 tablespoon of instant coffee

Mix eggs, sugar, oil, honey, and golden syrup. Add and mix flour, self-rising flour, baking soda, cinnamon, and all-spice.

Add and mix hot water with a tablespoon of instant coffee.

Put into a lined cake tin and bake in a pre-heated oven for 1-1/4 hours. Let it cool with the oven door slightly open, then take out of the tin and you can wrap in Glad Wrap and keep in fridge for ages.

Archivist's note: Golden syrup is a certain kind of sugar syrup available in Australia and the UK, you can also find it in Australian groceries or substitute with corn syrup.
