Ginger Cake, Fresh (D/P, TNT)

Serves: 8-10

1-1/2 cups flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup light or dark brown sugar
1/4 cup light molasses
1/4 cup dark corn syrup, golden syrup, honey or light molasses (I used golden syrup)
1 large egg
1/2 cup finely minced fresh ginger
8 tbsp. (one stick) margarine or butter
1/2 cup water

Whisk together thoroughly flour, baking soda and salt.

Whisk together in a large bowl brown sugar, molasses, syrup, and egg.

Whisk ginger into syrup mixture.

Combine butter or margarine and water in a saucepan and heat until melted. Whisk into the molasses mixture. Stir in the flour mixture just until smooth.

Scrape the batter into the pan. Bake 25 to 30 minutes. Let cool in the pan on a rack for 10 minutes. Remove from pan and cool.

Poster's Notes:
I baked this in a bundt pan and sprinkled it with powdered sugar. I also grated the ginger instead of mincing it. It is a bit spicy, but very good especially after a heavy meal.
