Gerbeaud (Djerbo/Szerbo) Cake III (D, TNT)

250 grams butter
400 grams flour
4 egg yolks
80 grams sugar
1 package vanilla sugar
1/2 teaspoon yeast
1/8 cup warm milk
1 teaspoon baking soda
Raspberry jam
Chopped walnuts
Chocolate Ganache (click here for recipe)

Dissolve yeast in small amount of warm milk (up to 1/4 cup.).

Cut butter into flour; mix in sugar, vanilla sugar, and baking soda. Make a well in the center and add egg yolk and yeast mixture. Knead into a dough.

Divide into 4 parts. Roll out one piece of dough and place in bottom of 9"x13" pan. Spread with a thin layer of raspberry jam and sprinkle lightly with nuts. Reapeat with two more layers. Place fourth piece of dough on top and bake at 350°F for one hour.

Cool slightly and spread with ganache. Cool completely. When cool, cut into squares or diamonds.
