Meringue, Italian (P, KLP, TNT)

Yield: enough for a big cake (30cm round and 5-7cm high)

1 cup egg whites
1 lb. (1/2 kg.) sugar

Mix together sugar and egg whites, and warm only until you can put the finger into the hot mix without burning.

Put the heated mixture into the electrical mixer and beat it about 20 minutes or half an hour at maximum. It will be almost cold and hard.

Use for decorating and frosting. You may add food colors too.
