5 egg whites
Beat egg whites until frothy. Sprinkle salt and cream of tartar over top and beat until stiff. Gradually beat in sugar, 2 tbsp. at a time. Add flavoring and continue beating until stiff and peaked.
Pour into well-buttered pan. Place cake in oven which has been preheated to 450°F. Turn off heat at once. Bake cake overnight in stored-up heat. Remove from oven just before serving. Cover with fresh fruit or frozen strawberries or peaches and whipped cream.
