Dried Fruit Cake II (D, TNT)

Serves: about 12 slices

2 cups about - all sorted dry fruits, apricots, peaches, pears, and papayas
1 cup Vermouth,- soak the above fruits over night, or with any other good brandy
1/2 cup raisins
3 cups all kind of nuts: walnuts, cashews, almonds, and hazelnuts

Ingredients for the batter:
3/4 cup butter
3/4 cup sugar (you can add another 1/4 cup)
3 big eggs
2 cups self raising flour
1 tsp. cinnamon
1/8 tsp. nutmeg
Note: add the cinnamon and nutmeg to the flour
1 tsp. vanilla essence - add to the juice

Fruits and nuts:
Drain the soaked fruits, reserve the juice, and add orange juice to have 1/3 cup of liquid. Cut the fruits into big pieces. Add the raisins and nuts blend well, set aside for further use.

Batter:
Cream butter and sugar until fluffy. Add the eggs one at the time with 1 tbsp. of flour. Add the rest of the flour alternately with the juice. Switch off the electric mixer, and add by hand all the nuts/fruits. Blend real well.

Buttered 2 small loaf bread baking pan, and dust with some biscuits [cookie] crumbs. Arrange the batter in the pans, and beat the pan on a wooden board to flatten the dough. Bake in a pre heated 350°F/180°C hot oven for about 40-45 minutes.

Cool for 15 minutes then invert the cakes on a rack to cool. To cut the cake, use bread knife.

Poster's Notes: This is the recipe that I just worked out for "My" Tu Bishvat cake. I think that from too much reading cooking books, I am not quite sure if I saw this recipe some where, or I just thought to myself, "It can't be bad, so lets try it" :). It did came out really very, very good, and I think I'll put it as one of my collection. :)
