Coffeecake, Vanilla (D, TNT)

Yields: 2 9" or 1 13"x9" cake

1-1/2 sticks butter
1-1/2 cups sugar
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
6 (1/2 cup) egg whites
3/4 cup milk or soy milk
2 tsp. vanilla

Preheat oven to 350°F. Grease pans and line the bottoms.

Beat butter and sugar until light and fluffy. Stir together flour, baking powder, and salt. Combine egg whites, milk, and vanilla. Add flour alternately with egg whites to the butter mixture. Scrape often.

Pour into pans and bake 25 to 30 minutes. Cool in pan for 5 minutes, then turn out and remove the paper.

Poster's Notes:
For a classic yellow cake, substitute 3 eggs and 1 yolk for the whites.
