2 cups self raising flour
Put all ingredients except the plums into a bowl and stir for two minutes (no more).
Pour into sprayed or paper lined rectangular tin (approximately 9"x7").
Drain liquid off plums, break plums into pieces, discarding pips as you work. Spread pieces all over cake.
Bake at approximately 350°F for 40 to 50 minutes.
Poster's Notes:
This mixture makes a marvelous marble cake as well. Pour 80% of mixture into a greased 8" round tin. Add 2 tablespoons cocoa and a little water to remainder of batter and beat again. Add to mixture and draw a fork quickly around in a circular motion to get a wavy look when cake is cut.

Tinned apricots are also excellent. Tinned apples sprinkled with cinnamon, flaked nuts and some sugar is very nice too.
