Coffeecake, Peaches and Cream (D, TNT)

Yield: 1 8"x12" cake

1 small 3-5/8-ounce package instant vanilla pudding
3/4 cup self-rising flour
1/2 cup milk
1 egg
3 tablespoons margarine, softened
1 large 1-pound-13-ounce can sliced peaches, drained (reserving 3 tablespoons juice)
1 8-ounce package cream cheese, softened
1/3 cup sugar
2 teaspoon cinnamon-sugar

Mix together pudding mix, flour, milk, egg, and margarine. Beat for 2 minutes and spread in bottom of a flat, 2-quart, 8"x12'' baking dish, which has been coated with nonstick spray.

Drain peaches and spread over dough mixture. Mix together the cream cheese, sugar, and peach juice. Beat for 2 minutes and spread over peaches. Sprinkle with mixture of cinnamon and sugar. Bake for about 35 minutes at 350°F.
