Coffeecake, Eggless (P, TNT)
Source: Gold Medal flour insert
Serves: 9

1-2/3 cups flour
1 cup brown sugar
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/2 cup oil, or 1/4 cup applesauce and 1/4 cup oil
1 teaspoon vinegar
1/2 teaspoon vanilla

Mix dry ingredients. Mix in the rest. Put into an 8" square pan.

Bake 35 to 40 minutes at 350°F.

Variations:
Applesauce:
Omit cocoa and vanilla. Add 1-1/2 tsp. cinnamon. Replace 1/2 cup water with 1/2 cup applesauce.

Chocolate Chip:
Omit cocoa. Add 1/3 cup chopped nuts. Top with 1/2 cup chocolate chips.
