1 cup brown sugar
Preheat oven to 325°F. Pan-spray a 13"x9"x2" pan.
In a large bowl sift together sugar, flour, cocoa, baking powder, soda, and salt.
In a medium bowl, combine potatoes, buttermilk, chocolate syrup, oil, and vanilla. Beat until smooth. Add to dry ingredients and beat well to combine.
In a medium bowl, combine egg whites with cream of tartar and beat until stiff. Stir 1/2 of the beaten egg whites into the batter to lighten it. Gently fold in remaining egg whites.
Pour batter into prepared pan. Bake for 30 minutes.
