Coffeecake, Blueberry Streusel (D, TNT)

Serves: 12-15

Cake:
1-1/2 cups sugar
1/2 cup vegetable shortening
2 eggs
3 cups flour
4 heaping tsp. baking powder
1/2 tsp. salt
1 cup milk
1-1/2 to 2 cups blueberries

Topping:
1 cup brown sugar
4 tsp. flour
4 tsp. cinnamon
4 tsp. margarine or butter

Beat sugar, shortening, and eggs well. Add flour, baking powder, salt and milk and mix well. Add blueberries and mix in by hand gently. Batter will be thick.

Put batter in sprayed bundt pan. Mix streusel topping and sprinkle evenly on top.

Bake at 350°F for 1 hour. Cool in pan and remove carefully.

Poster's Notes:
This recipe gives you a nice looking high cake with streusel on top.

Just make sure NOT to remove it from the pan while still hot (the last time I baked this cake we had to rename it "Broken Cake")
