Coffeecake, Banana Yogurt (D, TNT)

3/4 cup plain yogurt
2 large very ripe bananas, (1 cup mashed)
2 tablespoons vegetable oil
1 teaspoon finely grated lemon rind
1-1/2 cups self-rising flour
3/4 cup granulated sugar
1/2 teaspoon ground allspice

Preheat oven to 350°F.

In a large bowl, mash bananas well. Add yogurt, oil, and lemon rind and stir until combined and smooth.

In separate bowl, stir together flour, sugar (reserving 1 tablespoon for later use), and allspice. Pour wet ingredients over dry ingredients. Stir gently until just combined.

Line a 9" removable bottom cake pan with parchment paper or wax paper. Spray with non-stick cooking spray. Spoon batter into cake pan and sprinkle with remaining tablespoon of sugar.

Bake 50 minutes. Let cool in pan on rack.
