Coffeecake, Banana-Sour Cream (D, TNT)

Serves: 8 to 10

1/2 cup butter or margarine
1 cup sugar
2 eggs
1 cup bananas, mashed
1 tsp. vanilla
1/2 cup sour cream
2 cup sifted flour
1 tsp. baking soda
1 tsp. baking powder
Pinch of salt

1/4 cup nuts, finely chopped
1/4 cup sugar
1/2 tsp. cinnamon

Make Cake:
In bowl, cream butter until light. Gradually beat in sugar. Beat in eggs, one at a time. Add mashed bananas, vanilla, and sour cream.

Sift together flour, baking powder, baking soda, and salt. Fold into the cream mixture, stirring just to blend.

Make Streusel and Assembly:
In a separate bowl, combine streusel ingredients. Sprinkle this mixture over bottom of well-greased Bundt or tube pan. Spoon in half the batter. Sprinkle with remaining mixture and cover with balance of batter.

Bake at 350°F, approximately 45 minutes or until your tester comes out clean and cake is nicely browned. Cool in pan on rack for 10 minutes. Turn out on rack to cool.

Poster's Notes:
I use more bananas than called for.

You can use up to one cup of sour cream.
