Coffeecake, Miriam Machlis' Apple (P, TNT)
Source: Mizrachi Women's cookbook - Columbus, Ohio
Serves: 16 or more

1 cup margarine
1-1/2 cups sugar
3 large eggs
3 cups flour
1-1/2 teaspoons baking soda
Pinch mace, optional
1/2 teaspoon salt
1 teaspoon cinnamon
2 teaspoons vanilla
2 tablespoons brandy or liqueur or sweet wine, optional
3 cups apples, peeled, cored, chopped or shredded
1 cup walnuts, chopped, or pecans
1 cup chocolate chips

Cream margarine and sugar until fluffy, beat in eggs.

Sift dry ingredients and add gradually. Fold in remaining ingredients.

Spoon into a greased and floured 10" tube pan or 12"x17" rectangular pan. Bake at 350°F for about an hour or until the cake tests done.

Poster's Notes:
In response to the request for an apple cake that can be cut into squares : This is a wonderful, TNT recipe, which we often make for shul kiddushes back in the old country. Miriam (who died many years ago) was a wonderful cook and baker. Use the rectangular pan if you want to cut it into squares.
