Coffeecake, Easy Apple (P, TNT)
Source: Amit Women/Efrat Chapter Cookbook (Chicago Area)
Yield: One 9" square pan (9 to 12 servings)

1 cup sugar
3/4 cup flour
2 eggs (or equivalent egg substitute)
1 regular size can apple pie filling (light or regular)
1 stick (4 oz.) melted margarine
1 tbsp. lemon juice
Cornflake crumbs

Melt margarine; set aside 3 tbsp. of melted margarine for topping. Mix remaining ingredients and pour into a greased/sprayed 9"x9" pan.

Cover with cornflakes and pour 3 tbsp. margarine over top. Bake at 350°F for 45 minutes to one hour.

Poster's Notes:
I only partially baked it before Shabbat and it sat in a 225°F oven to finish up.
