Bread, Zucchini II (P, TNT)

Serves: 2 loaves

1-1/2 cups sugar
3/4 cup brown sugar
3 cups flour
1-1/4 teaspoons baking soda
1 teaspoon salt
3 whole eggs well beaten
1 cup oil
1-1/4 teaspoons vanilla
2 cups zucchini grated

With electric mixer, combine first five ingredients.

Then add eggs, oil, vanilla, and zucchini. Mix well.

Divide mixture into 2 greased loaf pans and bake at 325°F for approximately 1 hour or until toothpick inserted at center comes out clean.

Cool on rack. Can be frozen if required.

Poster's Notes:
I grow my own zucchini in my back yard. I decided to try and find a recipe to make something different with the zucchini. I found this GREAT recipe for zucchini bread. I made 2 loaves and gave one to my mother. She ranted and raved how wonderful it is and my 3-year-old ate almost 1/2 of it the first sitting. It is very sweet and delicious. You could probably also put cinnamon in it or nuts..
