1 cup white sugar
Preheat oven to 350°F.
Spray veggie oil into mini loaf pans, or 1 regular loaf pan.
Sift sugars, flour, baking soda, baking powder, spices, and salt together.
Pour in oil; add vanilla. Break in eggs.
Beat together until well blended.
Stir in zucchini, raisins, nuts and orange rind.
Pour into greased pan. Bake in preheated oven for 45-50 minutes.
Cool in pan on rack.

1 tsp. salt
1 cup oil
1 tbsp. vanilla
3 whole eggs
2 cups zucchini, grated
1 cup raisins, softened
1 cup walnuts, chopped
2 tbsp. grated orange rind
Finally had a chance to sit down and update myself on all the new recipes - when I saw all the zucchini recipes, I though that this bread would be a welcome addition - have made it for brunch for years - it is moist and delicious - again, for those who are diet conscious, use the usual substitutes & enjoy. I love to include these mini loaves in a basket (with a variety of other mini loaves (ie., strawberry minis, banana minis, etc) for brunch.
