Bread, Mango (P, TNT)

Yield: 2 loaves

3 eggs, beaten
2 cups ripe mango, chopped
1 cup oil
2 tsp. baking soda
2 tsp. cinnamon
Pinch of salt
2 cups flour
2 cups sugar
2 tsp. vanilla
1 cup sweetened coconut
1/2 cup walnuts, chopped

Heat oven to 350°F. Grease and flour 2 loaf pans.

Add all ingredients together, and bake for 1 hour 15 minutes, or until top is brown, and bread springs back when touched.

Poster's Notes:
It takes about 2 or 3 ripe mangoes to get 2 cups chopped. This is a great substitute for Banana Bread, and is delicious.
