Chocolate Yam Cake (D, TNT)

Yield: 1 tube or bundt cake

1-1/4 cups cooked mashed sweet potatoes OR
1 15-oz. can of cooked yams, drained and mashed (save some liquid)
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
2 large eggs
6 tbsp. butter softened
Small package of chocolate instant pudding
3/4 cup skimmed evaporated milk (or regular evaporated milk)
2 tbsp. bourbon OR 2 tsp. rum flavoring
1 tbsp. pumpkin pie spice
1 package Devil's Food Cake mix

Preheat heat oven 350°F. Spray bundt or tube pan with baking spray or grease and flour.

Blend all ingredients except cake mix in mixer medium speed until all lumps are gone and mixture is smooth.

Fold in cake mix until well blended. Pour into prepared bundt pan and bake 45 minutes or until a toothpick inserted in cake comes out clean.

Poster's Notes: I was asked to fix Thanksgiving types of desserts for 60 members of the Friendship Force and our guests from Recife, Brazil.

Since they will be here in November, the farewell dinner will be a Thanksgiving theme.

I made up the following recipe by adapting several that I found. My DH said it is the best chocolate cake he ever tasted! He would never believe that yams are the reason!
