Carrot Cake, "Lite" (P, TNT)

Yield: 1 big round cake or 2 loaves

9 large carrots, processed
2 cups flour
1/2 cup raisins, chopped
1/4 tsp. allspice
1/4 tsp. cloves
1/4 tsp. ginger
2 large or 3 small bananas, mashed
1 cup apple sauce
1 tbsp. vanilla
1 tbsp. nutmeg
1 tbsp. cinnamon
1 tbsp. baking soda
1 tbsp. baking powder
1/2 tsp. salt
2 cups of sugar

Mix all ingredients thoroughly until well combined. Bake about 1 hour at 350°F, until top browns.

Poster's Notes:
Try mixing half white and half whole wheat flour, or all whole wheat pastry flour.

Sucanat, or other unrefined sugar or sugar replacement will work.

I have not tried honey, though, but that would probably work too.
