Cake Mix, Basic (P, TNT)

Yield: Approximately 16 cups

8 cups cake flour
6 cups sugar
1/4 cup baking powder
1-1/2 teaspoons salt
2-1/2 cups vegetable shortening

In a large bowl, sift together cake flour, sugar, baking powder, and salt. Mix well.

With a pastry blender, two knives, or in the food processor cut in shortening until evenly distributed. Put in a large airtight container. Label. Store in a cool, dry place. Use within 10-12 weeks.

Poster's Notes:
Here is a do-it-yourself cake mix based on a recipe from the book "Make-a-Mix Cookery." There are many variations to it. You can use it for any Dump Cake recipes.

For best results, cut in the shortening so the mix resembles cornmeal.
