1 cup raisins
1 cup dried
fruit, diced
2 cups water
2 cups all-purpose
flour
1 teaspoon
baking soda
1/2 teaspoon
salt
1/2 teaspoon
ground nutmeg
1-1/2 teaspoons
ground cinnamon
2 eggs or
egg substitute equivalent, beaten
1 cup unsweetened
applesauce
2 tablespoons
liquid sweetener
3/4 cup vegetable
oil
1 teaspoon
vanilla extract
1/2 cup nuts,
chopped
Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool.
Meanwhile, in a large mixing bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly.
Pour into a greased 10" fluted tube pan. Bake at 350°F for 35-40 minutes or until the cake tests done.
