4 or 5 large apples, Rome or Granny Smith are our favorites, peeled and diced
Mix apple with cinnamon and sugar. Set aside. Mix rest of ingredients together well. Beat well at least 5 minutes (on one-bowl cake speed). Grease and flour a tube pan or a 13"x9"x2" pan.
Pour a thin layer of the batter in the pan, top with 1/2 of the apples, then another layer of batter, then rest of apples and then rest of batter. Bake at 350°F for 1-1/2 to 1-3/4 hours.
After first half hour, cover lightly with foil to keep top of cake from burning. Let cool. Cut lengthwise in thirds, slice horizontally.

3 tsp. baking powder
2-1/2 cups sugar
1 cup oil
4 eggs
1/2 tsp. salt
1/3 cup orange juice
2 tsp. vanilla
This is a real favorite in our families. I always serve it for Rosh Hashanah but at many other times during the year too.
