Angel Food Cake, Apricot (P, TNT)

Yield: 1 9"x13" cake (about 12 servings)

1 package angel food cake mix
1 15-oz. can apricot pie filling
1 cup grated carrots
1/2 tsp. ginger
4 tablespoons snipped, dried apricots

Preheat oven to 350°F. Spray a 9"x13" pan with Pam.

Mix together pie filling, carrots, ginger, and apricots. Stir in dry cake mix.

Pour into pan. Bake for 20-25 minutes. Serve with whipped topping if desired.
