3 eggs
Beat the eggs. Add sugar slowly, still beating. Blend the egg and sugar mixture with almonds.
Place the dough in a round springform pan. Do not preheat oven. Place baking dish in oven, turn oven to 350°F and bake about 50 minutes.
Serve with whipped cream and fresh fruit.

1-1/3 cup sugar
1-1/3 cup ground almonds
1/4 tsp. KLP baking powder
I had this, many years ago in Norway, and didn't realize at the time that it was flour-free. It will brown, but you want to pull it from the oven before it turns too dark. I might add an additional, individually beaten, egg white in place of the 1/4 teaspoon of baking powder called for in the original, but I'm not sure it's altogether necessary. (Some vanilla flavoring would not be amiss, but not traditional.)
