4 unsalted matzos
Spray an 8"x8" baking pan. Break matzos into small pieces, but do not crush. Layer the matzos with the fruit pieces, alternating and ending with the matzo.
Beat other ingredients together until sugar is dissolved or honey incorporated completely. Pour over the matzo and fruit. Cover and refrigerate overnight.
Preheat oven to 350°F.
Remove from refrigerator and bake at 350°F for 30 minutes, or until knife inserted off center comes out clean and the top is lightly browned.
Allow to sit for a few minutes before cutting into 4 servings. Serve with KLP powdered sugar or syrups.
