Pancakes or Waffles, Pesach (D, KLP)

2 eggs, separated
3 tablespoons oil
1/2 cup buttermilk
1/4 cup sugar
1/3 cup matzo cake meal
1/8 cup potato starch

Beat egg whites with until soft peaks form. Gradually add sugar and continue beating until stiff but not dry. Set aside.

Beat egg yolks with oil until light, about 5 minutes. Add milk and continue beating.

Gradually add dry ingredients. The batter will be thick.

Pour batter into a prepared waffle iron or spoon pancakes onto a griddle. For pancakes cook on first side until top bubbles. Turn only once.
