1 cup cottage cheese (I use whipped cottage cheese, if its available, since it gives a much smoother consistency)
Combine the cottage cheese and eggs together with a fork. Add the rest and mix. Let rest about 10 minutes (if that suits your custom).
Heat up pan, spray with vegetable cooking spray (or add butter), spoon out the batter, fry and flip. My children love 'em with strawberry jam.
