Omelet, Baked Spinach (P, KLP, TNT)

Serves: 6 to 8

2 white onions, peeled and chopped
6 cups fresh spinach, washed and chopped
6 green onions, chopped
7 large eggs
Pepper, to taste
Paprika, to taste
Turmeric, to taste
Salt, to taste
Ginger, to taste
Garlic, to taste

Pre-heat oven to 350°F.

Sauté white onions until golden brown. Prepare spinach and green onions. Beat eggs until fluffy.

Mix all the onions, spinach, green onions, and herbs/spices into the eggs.

Pour it into a lightly greased pie pan. Bake for 15 or 20 minutes until solid in the middle.
