Geshmeerte Matzo (D, KLP, TNT)
Source: An old woman who ran a kosher dairy with her husband here in Cincinnati
Serves: 8

1 jar dry cottage cheese
2 eggs
1/4 cup sugar
2 matzos

Spread the above mixture on whole matzos.

Sprinkle with a mixture of sugar and cinnamon.

Bake on cookie sheet at 350°F for 20 minutes, until firm. Cool on rack and cut into serving pieces (4 per matzo).

Poster's Notes:
It is hard to find the dry cottage cheese, so I used two small packages of farmer's cheese.
