Chremslach I (M, KLP, TNT)

Yield: 12 to 15

Crust:
5 eggs
1-1/4 cups matzo meal
5 tablespoons water
3 tablespoons chicken fat, imitation chicken fat, or vegetable shortening
1 teaspoon salt

Filling:
1 cup chopped cooked meat
1 cup chopped cooked liver
2 tablespoons minced onion
2 tablespoons chicken fat or substitute

Make Crust:
Beat the eggs slightly, add the matzo meal, water, chicken fat, and salt. Mix well and chill until filling is ready.

Make Filling:
Mix all together. Season with salt and pepper to taste.

Assembly:
Make oblong patties with the dough, about 1/4" thick. Spread half of the patties with the filling and then cover with the other half of the dough. Seal together in an egg shape and place on a greased baking sheet that has sides. Brush each patty with the chicken fat and bake in a 375°F oven for about 45-50 minutes.
