Cooking spray
Coat a large skillet with cooking spray. Sauté mushrooms, onions, and pepper over medium heat until tender.
Coat a 13"x9" baking dish with cooking spray. Place bread pieces in dish. Spoon mushroom mix over bread. Pour wine over mushroom mix. Sprinkle with cheese.
Combine egg substitute and remaining ingredients. Pour over layers in dish.
Cover and chill 8 hours. Let stand at room temperature 20 minutes before baking. Cover and bake at 325°F for 1 hour.

1/2 cup red or green pepper chopped
1 16-ozs. loaf of French or Italian bread torn into bite size pieces
2/3 cup white wine, or water
1 cup shredded low fat Swiss cheese or other cheese
1-1/2 cups frozen egg substitute thawed
1-1/2 cups skim milk
1/2 tsp. thyme
1/2 tsp. dry mustard
1/4 tsp. pepper
