Blintz Souffle, Fast (D, TNT)

Serves: 6

3 ounces (85g) cream cheese
1 lb. (2 Israeli containers) cottage cheese
3 eggs
1/2 tsp. lemon juice
1/2 tsp. vanilla
1/2 cup flour
1/2 tsp. baking powder
4 tablespoons honey

Combine cheeses and eggs in blender or mixer. (You can also mix by hand.) Fold in remaining ingredients except cinnamon.

Pour into greased 8"x8" baking pan. Sprinkle with cinnamon.

Bake at 325°F/170°C for 40 to 50 minutes or until lightly browned.

Poster's Notes:
This is a great blintz loaf that is simple and doesn't require frozen blintzes.
