Blintz Souffle II (D, TNT)
Source: Libbye Fineberg, Sisterhood Temple Beth El, Jersey City, NJ (1974)
Serves: 6

2 packages (12 total) cheese blintzes, defrosted
1/2 stick butter or margarine (about 1/4 cup)
1-1/2 cups sour cream
1/2 tsp. salt
4 eggs, well beaten
3 tbsp. sugar
1 tsp. vanilla
1 tbsp. frozen orange juice undiluted (optional)

Melt butter in an 9"x13" pan. Place blintzes over butter in one layer.

Blend other ingredients w/eggs and pour over blintzes. Bake 45 minutes at 350°F or until top starts to brown.

Can be served w/powdered sugar, strawberries, or any other fruit. We like it just plain!

Poster's Notes:
Depending on the amount of room in the pan, and the amount of blintzes I have, I have cut the recipe in half, or used 8 blintzes with one half of the rest of the ingredients. I have also done it with up to 14 blintzes, not altering anything else.
