Blintzes, Cheese (Bilinnie) (D, TNT)

Yield: Depends on size of white bread. Two blintzes from each slice of bread.

1 to 2 white breads
1 pound low-fat cream cheese
3 egg yolks
Vanilla
1/2 cup sugar
Mixture of cinnamon and sugar
1 stick (or more) melted butter/margarine

Cream cream cheese, egg yolks, sugar, and vanilla to taste. Cut crusts off of white bread slices; roll each slice as thin as possible.

Place filling in center of bread slice; roll and stick ends together with melted butter/margarine. Then dip entire billinni in melted butter/margarine and then into combination of cinnamon and sugar.

At this point you can freeze the billinies. Remove from freezer; cut each billinni in half.

Bake for approximately 10-15 minutes at 300°F.

This is a great recipe--and you don't have to make the skins--they are white bread!!
