Blintz Batter (D, TNT)

Serves: 4

3 eggs
1 cup flour
1/4 sugar
3/4 cup milk
1/4 water

Beat the eggs, add flour and sugar until pasty. Mix in the milk and water a little bit at a time until you get a batter.

Heat up a frying pan on medium/high heat, spray with non-stick spray, pour in just enough batter to coat the pan, wait until it's starts to bubble and the bottom is slightly brown, flip, let it sit for another 30 seconds or so on the other side, slide onto a plate.

Poster's Notes:
In the old days by mom would brush on butter--yum instead of non-stick spray.

Finally getting around to posting my blintz recipe.

I eat them plain; my husband and son eat them stuffed with cheese.
