Scones, Weight Watchers (D)

Yield: 12 scones

Low-fat cooking spray
150g (5-1/2 oz.) plus 2 tbsp. plain flour
1 tbsp. sugar
1 tbsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
225ml (8 fl. oz.) low fat plain yogurt
1 egg
1 tbsp. polyunsaturated margarine melted and cooled

Preheat oven to 425°F (220°C, Gas Mark 7). Spray a baking sheet with cooking spray.

In a large bowl combine flour, sugar, baking powder, baking soda, and salt.

In a small bowl combine yogurt, egg, and margarine. Add yogurt mixture to flour mixture stirring until just blended. Do not over mix.

Lightly flour a work surface and rolling pin. Roll out dough to 6mm (1/4") thickness. With a sharp knife cut into 12 wedges and place on baking sheet. Reduce oven temperature to 400°F (200°C, Gas Mark 6) and bake until golden brown, 12-15 minutes. Cool on a wire rack for 10 minutes.

I thought I would pass along this recipe for traditional scones from the U.K. Weight Watchers web site. My guess is that these aren't as yummy, but I could eat these and still be able to eat another meal that day. I haven't made this recipe yet, so I can't comment on the quality of the scone (How does Martha eat all the stuff she makes and not look like one of the two fat ladies?).

Serve these scones warmed; in keeping with tradition, split and filled with raspberries, alongside a cup of Earl Grey tea. Or accompany them with fresh fruit salad.
