3-1/2 cups self-raising flour
Sift together flour and salt.
Stir together, the cream and the soda. Pour into flour and mix with a fork until dough is formed.
Lightly knead with hands (note: the less handling the better). Form dough into a square then pat down to about 1" and cut into scone-sized rounds (I use my American biscuit cutter). Repeat about 3 times until all dough is used.
Place on an ungreased baking sheet.
Bake in a hot oven: 450°F for 10-12 minutes (until golden). Serve with butter or serve with jam and heavy cream for "Devonshire Tea."

250ml (just over 1 cup U.S.) heavy cream ("unwhipped" whipping cream is suitable)
250ml 7-Up-type soda-pop (equivalent to "lemonade" in Australia)
These come out beautiful: raised, light and melt-in-your-mouth delicious every time!
