Rolls, Sweet Potato (D, TNT)

Yield: Varies, depends upon size of rolls

1 medium or 2 small sweet potatoes (yams), boiled and mashed
2/3 cup water
1 cup whole wheat flour
1-3/4 cups white flour
1/4 cup olive oil
1 tbsp. sugar
1 tsp. salt
1 tbsp. dry yeast (I used granulated fresh yeast)
100g (about 3 oz.) grated cheese (I used a combination of emek and pizzarella)
1 egg beaten with 1 tbsp. milk (egg wash)
Sesame or poppy seeds

Mix the two kinds of flour with the yeast, sugar, oil, and water.

Add the mashed sweet potatoes/yams and the cheese, and finally the salt. Knead into a smooth dough. (Mine stayed kind of sticky).

Cover the bowl and let rise one hour.

Preheat oven to 180°C (350°F).

Shape into balls and let rise another half hour. Glaze with the egg wash and sprinkle with poppy or sesame seeds.

Bake for about fifteen minutes, until golden.

Poster's Notes:
I thought I'd post this recipe for sweet potato rolls I made today. I'm sure it could be made with pumpkin just as easily.

I got the recipe from one of the local papers, but I cannot remember which one.

It couldn't have been easier. Seems pretty healthy to me (no margarine), and was a hit. My picky eaters loved them!
