Rolls, Pesach IV (P, KLP, TNT)
Source: 2008 Meon Hatorah Yeshiva cookbook
Yield: 8 rolls

1/2 cup oil
1 cup water
2 cups matzo meal
1 tbsp. sugar
1 tsp. salt
4 eggs

Preheat oven to 375°F. Boil water and oil together in 4- to 6-quart pot.

Combine matzo meal, sugar, and salt. Add to pot.

Beat rapidly over low heat until mixture leaves sides of the pot and forms a ball. Remove from heat and cool for 15 minutes.

Add eggs and beat one at a time, making sure batter is thick and smooth after each addition.

Shape into 8 balls and place on well-greased cookie sheet. Bake at 375°F for 45 minute to 1 hour, or until golden.

Poster's Notes:
These came out great--they puffed up nicely and taste good. My sons have been enjoying them with jam and butter, but you can use them for anything.

The batter is sticky, so when forming the balls, I divided it into quarters, then wet my hands a little to divide each quarter and form a ball.
